Ok so work was definatly rather interesting last night. First off we were short handed cause one of the girls sister in law is in the hospital so she wasnt at work and it was Tom's day off so that left 2 1/2 people to do all the work. i say 1/2 because Heidi is still in training and cant do everything yet leaving us rather short on people. I got to work at 8:30 as usual and got everything ready to go, the machine set up, bags pulled from boxes, lots of trays everywhere, the whole works. There was only one slight glitch in all of this... we had no bread. Apparently like 5 outta 8 ovens werent working and the thing that makes the bread rise wasnt working either so hardly any of the bread was even even in the oven much less on the cooling rack on its way to us. After it gets on the rack it takes 45-50 minutes to get to us. This being the case we didnt even get our first run of bread until a little after 10pm, over an hour and a half after we got there. then joy of joys, we got our first run of bread. it took about 10 minutes (maybe) to run this through the machine and then guess what, yup. there was another gap in the line. this one about half an hour long. thats basically how the first few hours of the night went. stop and go all the time. rather annoying if you ask me. On the plus side i feel that i am much a genious at the moment because i got that stupid double bagger (we use it for costco and sams bread) to actually work like it is supposed to. and that is pretty much a first for that so i was feeling rather proud of my self. For more of the evils of work when we got to the Big Sky White bread it was all WAY to soft and wouldnt go into the bags cause every time any presure was put on it it just smushed all over the place. so instead of getting almost 1000 loaves of that to sell, we got 640. not very good odds if you ask me. After that bread was done we had no empty trash cans so i did the logical thing and went to empty them although the way i did it was apparently cause for astonishment, congratulations and laughing. odd how the three of those go together. All i did was get a pallet mover and stick a pallet on it and load the bags of bread on. i figered that since they have to go on a pallet anyways i might as well just do it now and not worry about it later. i must say it worked rather well even though ppl were laughing at me as i did it. i say work smarter not harder and boy did it work good :D about half way through the night the de-panner stopped working. thats the doo hickey that pulls the bread from the pans and drops it on the conveyor belt that brings it to me. so they had to start pullin all the bread from the pans by hand and that takes almost half of forever. basically 2 people have to stand on different ladders and then the bread is handed up and they have to dump it on the line making sure that it is all going the right way and is right side up. so thats where they were when i left and boy was i glad to leave!
now it is time for a shower and bed so ciao for now.

Whew! I think I'll eat my bread out of my own bread machine, thank you very much.
